A new bride in Dragon Quest V?

Dragon Quest V: Hand of the Heavenly Bride won't just be a straight remake of either the Super Famicom or PlayStation 2 versions of DQV. New characters, both original and pulled from other Dragon Quests, and new features are being put in. The Jailcat enemy from Dragon Quest VIII has been revealed to appear in the new game, and there's a new item shop feature, but Square Enix has something even more significant planned: a new character named Deborah.DQV follows the hero character over 20 years of his life, even including the option to marry one of two women. It seems likely that the newly-announced Deborah will be a third potential wife. You can see the full Jump scan at Jeux-France.

Although it is DQ5, does that mean you need to have played Dq 1-4 to be able to understand the full thing?!

No you don't need to have played the previous games, each DQ has it's own self contained story and characters. You won't be missing out on anything if you don't play the other games first.
This new Deborah character looks like some kind of Toriyama drawn Amy Winehouse!

She looks like someone I wouldn't mind taking some time to impress. Tel me, for someone more aligned toward FF and shining away from the "grind for hours to get a sword to grind for hours" that I've read asociated with DQ, do the fourth, fifth, and sixth titles hold a similar (or at least congruent) sway that the correspondent FF titles do?

What is great about DQIV - VI is that they are all excellent games in their own right. They all have simple, clear, well-balanced gameplay systems (it isn't as easy to find game-breaking exploits in the DQ series as it is in the FF games),and they also each have a unique approach to storytelling that has no correspoding equivalent in any FF game.
I think that people who play these games who may have the impression that DQ is all about grinding rather than story and characters will be pleasantly surprised by the quality and style of the storylines in these three games.
If you like the SNES FF games, these DQ remakes should be perfect for you.
